ZESPRI Recipe! - ZESPRI Kiwifruit Cheesecake

The crust
- 9 inch (ready crust) graham pie crust

For the filling
-500 g cream cheese
- 3/4 cup sugar
- 1/8 cup sour cream
- 3 eggs
- 1 egg yolks
- 1 tablespoon lemon zest and 1 tsp lemon juice
- 1/2 teaspoon vanilla extract

--preheat the oven to 230 degrees--

  1. Using the electric mixer to cream the cream cheese and sugar.
  2. Add the eggs and egg yolks, mixing well.
  3. With the mixer on low, add the sour cream, vanilla, and lemon zest.
  4. Bake for 15 minutes. Turn the oven temperature down to 110 degrees and bake for another 75 minutes.
  5. Allow the cake to sit in the open-door oven for 90 minutes.
  6. Let the cake completely cooled. Refrigerate overnight.
  7. Using the ZESPRI Kiwi both yellow and green (maybe some strawberry) to decorate the yummy cheesecake.
  8. Ready to serve.
