1 cup malunggay leaves
500 ml water
1 cup coconut milk
1/2 kilo of chicken breasts, diced
1 onion, finely diced
1 green bell pepper, diced
1 tsp garlic
3 inches ginger, peeled and sliced
1 lemongrass stalk, sliced
1 stalk green onion
Juice of half a lemon
Pinch of coriander, roughly chopped
Salt and pepper
1. In a casserole, pour the water, onion, green bell pepper, garlic, and the chicken. Add salt and pepper and boil.
2. Add coconut milk, ginger and lemon grass.
3. Knot the green onion stalk and add to the pot. Bring soup down to a simmer.
4. After about 10-15 minutes, or until the chicken is tender, remove the green onion and add the malunggay leaves, coriander, and lemon juice. Stir and turn off the heat. Let the hot water cook it for about a minute.
5. Ladle into bowls and enjoy.
