Two-ingredient recipes that will blow your mind
1. Flourless pancakes
All you need is one large banana mashed and 2 eggs. And since we’re not using any leavening agent, you can separate the yolks and whip up your whites if you want to give lift and fluffiness to your pancakes. Put the yolks together with the mashed banana and mix until combined. Then fold in your whipped eggs whites gently until you don’t see any more white streaks. You can do this apple and pear sauce as well! Great for those who are gluten intolerant and allergic to wheat.
2. Flourless Nutella Cake
Among these two-ingredient recipes, this one’s my favourite. All you need are a couple of large eggs and Nutella! Yes! It is that simple! But like the pancake, there’s also no leavening agents in this recipe, so you will need to beat the eggs until they are 3 times in volume. We hope you have a handheld or stand mixer at home otherwise it will require a lot of elbow grease! To make your Nutella a little runnier, pop it in the microwave using short bursts and make sure it isn’t too hot or you will end up with scrambled eggs when folding it in.
3. Coconut Macaroons
Want to make some quick simple macaroons? Just mix desiccated coconut and condensed milk! There should be enough desiccated coconut to make a sticky but pliable mixture. You can shape them into balls or use a mini ice cream scoop and place them on to lined baking trays. Bake them on the top tray until brown which should only take a couple of minutes. Keep a close eye on them because they can burn really easily!
4. Bacon-wrapped asparagus
How about making this simple dish for dinner? All you need are asparagus stalks and bacon! The saltiness and smokiness from the bacon would add a really nice flavour to your asparagus.
5. Watermelon and yoghurt popsicles
These delicious popsicles would be great for a hot day! But what if the watermelon you bought is not sweet enough? That’s where the yoghurt comes in. Blitz everything together in the blender and pour them into moulds. Once frozen you would be able to enjoy this tasty treat!
6. Cheesy crisps
Nobody will believe how easy it is to make cheesy crisps because all you need is some shredded parmesan cheese and freshly cracked pepper. You will also need a nonstick pan because they would make flipping the cheese a breeze. Start by spooning on to the pan some cheese followed by some freshly cracked pepper. Let the cheese melt. When it starts to look a little brown on the edges, then its good to flip! Let them cool on a wiring rack and when they have cooled down they should be crispy and delish!
7. Chocolate fudge
Want to make a quick fudge? Just melt some dark chocolate chips in the microwave and then stir in some condensed milk. Pour the mixture into a lined cake pan and then chill it until set. Cut into bite-sized pieces before serving.
8. Pizza dough
In a pinch but feeling like pizza? No problem! You can have instant pizza dough with just greek yoghurt and self-rising flour! When the dough is starting to come together, turn it out onto a flat surface and knead for about 10 minutes adding flour when necessary. For best results, let the dough rest about 20 minutes while you preheat your oven.
9. Breakfast cups
These delicious breakfast cups are so easy to do is one of the two-ingredient recipes that allow you to prep breakfast on the go. All you need is a large non-stick muffin tin. Line the sides with streaky bacon strips and then crack an egg in the middle. Pop them into a preheated oven until the whites are cooked through and the yolk just starting to set.
10. Puff pastry twists
There’s a reason why puff pastry should be a staple in everyone’s freezer. Spread on Nutella, jam or whatever you like and then give it a twist before baking them in the oven. They are quick, simple and super convenient! Want something savoury instead? Wrap them around sausages or even ham and cheese. Either way, it would still be delicious!
