Mushroom and sweet corn porridge

Pregnancy is a good time to fine tune an already good diet and improve a poor diet by eating nutritious, well balanced meals.

Mushroom and sweet corn porridge

Good source of selenium, copper, vitamin A and C (Serves 2)

What You Need:

1) 120g sweet corn

2) 80g dried mushroom

3) 80g carrot

4) 8 cups of water

5) 1 tsp salad oil

6) 1/2 tsp salt

What You Do:

1) Dice the carrot

2) Wash and drain the corn

3) Soak the mushrooms till soft and slice thinly

4) Soak washed rice for 30 minutes

5) Place the rice in a pot and add water

6) Bring to a boil and lower heat to a simmer

7) When the porridge is done, add carrot, mushrooms and sweet corn. Cook till soft

8) Add salt and salad oil before serving
