Make Dad feel like a king this Father's Day with Fairprice's Moroccan Chicken Stew recipe

With Fairprice's easy to make Moroccan Chicken Stew recipe, your dad will be thrilled with this meal that's fit for a king!

They say the way to a man’s heart is through his stomach, so with Father’s Day around the corner, there’s no better way to treat the king of the house than to make him a meal all by yourself.

Clueless when it comes to cooking? Fret not, with Fairprice’s easy-to-make recipes, you’ll be able to prepare a Masterchef-worthy dish anytime. And fuss-free!

So gear up and be prepared to thrill dad with this Moroccan Chicken Stew recipe that takes less than an hour to prepare.

Moroccan Chicken Stew

Serves: 2

Preparation Time: 10 mins

Cooking Time: 40 mins

 

Ingredients:

Olive oil: 2 tbsps
Chicken thighs, skinned: 4
Large onion, chopped: ½
Stewed tomatoes (about 400ml): 1 can
S&W Premium Prune Juice: ½cup
Raisins: ½ cup
Ground all-spice: ¼ tsp
Ground cinnamon: ½ tsp
Salt: ½ tsp
Ground black pepper: ½ tsp
Couscous: 1 cup
Water: 1 ⅓ cup
Butter: 1 tbsp
Lemon juice: 1 tsp

 

Instructions:

  1. Heat olive oil in a heavy-bottom pan over medium-high heat. Add chicken to the pan and sear for five minutes on one side.
  2. Add the chopped onion and stir till the onion and chicken are browned.
  3. Add tomatoes, prune juice, raisins, all-spice, cinnamon, salt and pepper to the pan. Stir and reduce heat to low.
  4. Cover and cook for 30 minutes, stirring occasionally.
  5. In the meantime, make the couscous by placing the couscous in a bowl. Bring the water to a boil and pour it over the couscous. Cover the bowl with a plate and allow the couscous to absorb all the liquid.
  6. Fluff the couscous with a fork and add the butter, a pinch of salt and lemon juice. Stir to mix well.
  7. To serve, place couscous on a serving platter and spoon the chicken stew on top. Garnish with chopped parsley.
