Tampines Hawker's $12 Durian Fish Soup And 3 Easy Recipes You Must Try!

Would you try this durian fish recipe?

It’s durian time in Singapore! Which means pop ups and stalls selling this tangy fruit are now scattered all over the island and true aficionados are out to taste the very best.

Incidentally, it is not just the fruit in its truest form that has caught everybody’s attention, locals are also game for some innovative during recipes. Take Derrick Ng’s example.

The 40-year-old hawker has been serving durian fish soup for just $12 and is a hit with many locals in Tampines. Now you may wonder why add the pungent fruit to an already clean-tasting soup?

Well, the chef has the answer.

Hawker Sells Durian Fish Soup For Just $12 in Tampines

Derrick Ng has been running the Wang Yuan Fish Soup in Tampines for almost 10 years now. According to a report in 8Days, the hawker-farmer’s fish soup focuses on health and wellness.

Elaborating on why he is adding durian to the fish soup, Ng says, “The answer lies not much in flavour, but health.”

The hawker believes in the principles of biodynamic agriculture, which is a form of organic farming based on a combination of spiritual and scientific beliefs. He explains, “The minerals and nutrients from the soil will be driven into the durian trees, which in turn travels to the durian fruit.”

Preparation

Durian flesh is shredded and added to the broth. Here, the cultivar of durian, whether it’s bitter or sweet isn’t important to him. Ng says, “We adjust for taste with seasonings like pepper and salt.”

You can get a bowl of durian spiked fish soup along with Batang for just $12. 

Response

Ng has received a mixed response to his durian fish soup ever since he introduced it on June 29. He says that people who already like durian or know about its health benefits are willing to accept it.  But those who are merely trying the durian fish soup out of curiosity may not be that impressed. 

Going ahead, Ng has plans to serve roughly “10 bowls a day” – from now till the end of the durian season (September). 

Other healthy options available

Ng also has “keto-friendly and completely MSG-free” options sans the durian at his stall. You can get the standard fish soup with a side of two veggies for just $6. You don’t get any rice or noodles unless you ask for them separately. Only brown rice and bee hoon are offered in this combination.

There are some expensive options at his stall as well and they are tried with different fishes like a salmon or a pomfret. The base of the fish soup stock is usually made of fish bones and a “cruciferous vegetable” like a cabbage.

3 Creative And Easy Durian Recipes You Must Try This Season

Durian Cream Pancake

Ingredients

  • 2 tbsp unsalted butter melted or vegetable oil
  • 2 large eggs
  • ¾ C whole milk
  • 2 Tbsp powdered sugar
  • Salt as per taste
  • 2 tbsp of granulated sugar
  • ½ cup of all-purpose flour
  • ½ tsp vanilla extract
  • For colour-1 tsp yellow goldenberry powder (Optional)
  • 2 durian pods fresh or frozen
  • Remove the flesh and then separate them into large chunks
  • ¾ cup of heavy whipping cream. It should have at least 36% milk fat

Steps

  • In order to make the crepe batter, blend all the ingredients together.
  • Use a sieve to strain the mixture into a measuring cup.
  • Cover the mixture and keep it inside the fridge for almost 1 hour. 
  • Then heat the frying pan over low heat and grease it with oil.
  • Pour about ¼ cup of batter and swirl it around evenly.
  • Now cook the batter for about 1-2 minutes.
  • You don’t need to flip this crepe.
  • Next, add heavy whipping cream and powdered sugar to a large bowl.
  • Whisk until stiff peaks form.
  • After the pancakes have cooled off, it is time to assemble.
  • Add 1 tbsp of whipped cream to the centre of pancake.
  • Then add a chunk of durian on top of the cream, and add another dollop of whipped cream to cover,
  • Now, fold the bottom of the pancake over the cream, and then fold in the sides before folding the top over. Your pancake is ready!

Durian Cake

Ingredients

  • 1 cup butter
  • 3 eggs
  • 1 cup durian meat
  • ¾ cup caster sugar
  • 2 Tbsp milk
  • 1 cup self-raising flour
  • 1/8 teaspoon baking powder
  • 1/4 teaspoon bicarbonate of soda
  • 1 teaspoon vanilla
  • 3 1/2 cups powdered sugar
  • 1/2 cup butter, softened

Steps

  • Preheat the oven to 340°F.
  • Then grease and line a 9” baking tin.
  • Add some butter and caster sugar to a large bowl. Beat until creamed. The mixture needs to turn pale in colour.
  • Add the eggs and then mix it well
  • Now add the durian, use a spoon to stir the durian and milk
  • You need to sift in the flour, baking powder, and bicarb soda. 
  • Then take out the batter into a 9” baking tin and bake for 40-50 minutes until cooked
  • You can check by inserting a skewer to see if it comes out clean
  • Allow the cake to cool and then slice the cake into thirds and ice the top of each layer.

Durian Popsicle

Ingredients

  • 200 g Durian flesh 
    250 ml Coconut milk  
  • 4 tbsp sugar
  • 100 ml full cream cow milk 

Steps

  1. Remove the flesh from the durian.
  2. Next add the durian flesh, coconut cream, milk and sugar into the pot.
  3. You need to cook this mixture on low flame and keep stirring until it’s mixed well.
  4. Put the mixture into the popsicle moulds.
  5. Keep in the freezer until they are firm
  6. Un-mould the popsicles and enjoy!
