Recipe for kids: Peas and rice

This one-dish meal looks pretty and tastes yummy! Light and tasty, it packs well into lunchboxes so your kids can have a hearty and nourishing meal in school.

Sneak in some peas in this yummy rice dish!

You will need:

¾ cup long grain white rice, washed and drained

1 ¼ cup water

2 tablespoon rice bran oil

2 cloves garlic, peeled and chopped

1 roll fish cake, cut into cubes

1 cup frozen peas

1 egg, lightly beaten

Salt to taste

Preparation:

Place rice and water in a rice cooker and cook until done. Leave to cool.

Heat oil in a work and stir-fry garlic until fragrant. Add fish cake and rice, and stir-fry for 3 minutes. Add peas and cook for another 2 minutes. Season with salt.

Create a space in the centre of rice and add egg. Allow egg to set, then scramble. Mix rice and egg well. Dish out and serve hot.
