I’ve always thought of bird’s nest as a "luxury food item" that only the well-to-do can afford to enjoy on a regular basis.

When I was growing up, I remember looking forward to those rare moments when I got to enjoy a warm, slightly sweet bowl of bird’s nest. I probably have my grandmother to thank for that, as those precious bowls were made possible from many, many hours of double boiling the bird’s nest.

So, when I was given a box of Yu Xiang Yan Bird’s Nest to sample last week, I couldn’t be more delighted!

Yu Xiang Yan bird’s nest is produced and distributed by a local Singapore company, S.K.Y Birdnest Trading Pte. Ltd.

Established in 2007, Yu Xiang Yan is known for its premium grade bird’s nest. From harvesting and production to packaging and distribution, all aspects of the product are handled in-house, thus allowing the company to maintain the quality.

Apparently, this is made possible thanks to the stringent bird’s nest selection process that the company adopts, where factors such as the colour, shape, size, fibre density and level of moisture are carefully considered.

Bird’s nest is typically built by 3 species of swiftlets: white-nest, black-nest and grass-nest.

The bird’s nest used by Yu Xiang Yan are made by the white-nest swiftlets (also known as House bird’s nest) - as these are deemed to be cleaner.

Apart from having a nice, natural colour with fewer feather particles, the House bird’s nest also boasts a high nutritional value and is more cost-effective compared to its counterparts.

Yu Xiang Yan has an eco-friendly swiftlet facility in Malaysia, where the white-nest swiftlets are housed. These premium House bird’s nest are then carefully hand-picked before going through a thorough cleaning and packaging process.

An innovative water-recycling system has been put in place at the facility to ensure that the place is free from faeces, feathers and other impurities that may compromise the quality of the end product.

Besides helping to reduce the growth of unwanted bacteria, this system also ensures the good health of swiftlets and maintain the high quality of the bird’s nest.

The team at Yu Xiang Yan kindly arranged for 6 bowls of freshly-cooked bird’s nest to be delivered to our office for us to sample. The package came in a handy paper bag, which contained the individual boxes of freshly-cooked bird’s nest in a ceramic bowl.

Do take note to hold the cover and the bowl together when taking the bowl of freshly cooked bird’s nest from the box. The last thing you want to end up with is an overturned bowl of bird’s nest!

Each bowl of Yu Xiang Yan bird’s nest comes with a ceramic spoon and an air-sealed cover. To open the cover, simply release the red vacuum knob and the cover should come off easily.

The numbers on the red knob indicate the date that the freshly cooked bird’s nest was sent to you. This helps you keep track of the "best before" date.

It is recommended to consume the bowl of bird’s nest within the day, or to keep it chilled in the fridge and finish it up within 3 to 5 days.

I kept mine chilled in the fridge and waited until I got home from work that night to dig in. After the first spoonful, I was literally in bird’s nest heaven!

The shreds of bird’s nest was ultra smooth and soft and the overall taste was not too sweet. Even my 18-month-old was excited about the contents of the ceramic bowl, as I placed it under her nose to let her smell the hints of rock sugar.
