Tandoori chicken

Ingredients: 3 Tbsp vegetable oil, 1 teaspoon ground coriander, 1 teaspoon ground cumin, 1 teaspoon ground turmeric, 1 teaspoon cayenne, 1 Tbsp garam masala, 1 Tbsp sweet (not hot) paprika, 1 cup plain yogurt, 2 Tbsp lemon juice, 4 minced garlic cloves, 2 Tbsp minced fresh ginger, 1 teaspoon salt, 4 whole chicken, (drumsticks and thighs), or its equivalent, skinless. Place in grill and cook for at 40 minutes.

- Mix three kinds of flour together – potato flour, corn flour and regular flour. Add in a block of shrimp paste (belacan) with a fair amount of water. Mix until the paste is thick. Stir in some salt and pepper. Marinade the chicken wings and leave it for 15 minutes before deep-frying.

Add in 1 tablespoon each of lemon juice, white vinegar, 3 cloves of chopped garlic and 1/2 cup of sour cream. To complete the marinade, add in some freshly chopped parsley. Marinade your chicken wings with the mixture and leave it for 15 minutes before deep frying.

Ingredients: 2 tablespoon each of vegetable oil and oyster sauce, one tablespoon of soya sauce, one teaspoon of dark soya sauce, ¼ of fresh thyme, 3 large cloves of garlic, 1 cup of chicken broth/stock. Add in one tablespoon of sugar when the cooking is almost done.

Preheat oven to 425 degrees, place chicken in oven and roast till skin is golden brown and crisp.
