Sweet Potato Pasta Recipe

As I am a full time stay-at-home mom to a wonderful 9 months old baby boy, I have to admit that I actually have the added advantage to invest some time in creating simple yet healthy delicious meal for my baby's meal time.

Here is one of my favourite easy go-to recipe for my baby's meal time. This is ideally for baby led-weaning babies.

Sweet Potato Pasta

Ingredients:

Sweet Potato (I prefer to use the orangey coloured ones)

Baby pasta

Brocolli

Spinach

Minced Chicken

Instructions:

Step 1 – Boil the pasta until it has truly soften. Usually babies pasta is softer than the regular ones. You can also check out the instruction on the duration at the back of the packaging.

Step 2 – Steam the sweet potato until it has soften enough for you to be able to mash it. This is to create the pasta sauce.

Step 3 – Chop the brocolli and spinach very finely.

Step 4 – Cook the minced chicken. You can use olive oil or regular cooking oil. Cook until it has turned completely white. Then add the chopped vegetables and cook it through. Afterwards, add the sweet potato sauce in. Stir through and put it on low heat (you may add water in if the consistency is too thick)

Step 5 – Add in the pasta and stir through.

Step 6 – Let it cool before serving.

As you can see, I did not add any salt or use any preservatives in this recipe. This simple yet healthy and delicious meal can actually be kept frozen in your freezer. Just remember to store it in an airtight container. You can either reheat it on the frying pan or microwave oven. I typically only store it up to maximum of 3 days.
