Recipe: Green Apple & Red Onion Salad with Slow-Cooked Salmon

Recipe for pregnant mums: This salmon dish for pregnant mums was specially created by the panel of experts for the Dumex: Parenting from the Heart media event in January 2014.

Keeping a healthy and balanced diet during pregnancy helps to keep both mum and baby in the pink of health. So do include a variety of food from each of the main food group in your daily diet – this helps to ensure that you are taking in the essential nutrients in the right amounts.

Here’s a great recipe that all mums can try out to get your recommended daily intake of DHA, the super nutrient that helps in the development of your baby’s brain and eyes:

Recipe for pregnant mums: Green Apple & Red Onion Salad with Slow-Cooked Salmon

Main ingredients

2 green apples, cored and diced

200g red onionm diced

50g low-fat or fat-free mayonnaise

Sea salt and crushed pepper, to taste

4 walnuts, roasted and crushed

4 fresh salmon fillets (80g each), skinned and sliced

200g mixed green salad

Citrus dressing

120ml fresh orange juice

50ml lemon juice

100ml olive oil

Sea salt and crushed pepper, to taste

1 fresh orange, segmented

 

Method

1. In a large bowl, place apples, onion, mayonnaise and seasoning – and mix well. Transfer the mixture into a smaller bowl and set aside to chill.

2. Season salmon with salt and pepper. Bake in preheated oven for 10 mins at 70°C. Set aside to cool.

3. In a large bowl, mix the citrus dressing ingredients together and whisk well.

4. Place salad on the centre if the plate and top with the salmon.

5. Garnish with mixed greens, orange segments and walnuts. Drizzle citrus dressing over.
