Many years ago, I traveled to the border country of Scotland to learn the secrets of traditional Scottish Oatmeal. I found my way to the legendary Preston Mill, on the banks of the River Tyne, where they have been milling oats since the sixteenth century. For days I stayed at this historic water-powered mill, studying everything from their special method for toasting oats to the ancient milestones. I took this knowledge home with me to Bob's Red Mill, and I am proud to say we have since perfected the art of stone grinding oats to make classic Scottish Oatmeal. I top mine with just a little butter and brown sugar, and it is absolute perfection.
