Ingredients

  • 1/2 cup of softened butter (not melted)
  • 1 cup sugar
  • 1 large egg left at room temperature
  • 2 cups cake flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2/3 cup buttermilk (you may also use buttermilk alternatives)
  • 1 teaspoon grated orange zest (you may also choose lemon or lime)

For the frosting, you’ll need:

  • 3/4 cup of softened butter (not melted)
  • 6 ounces of soft cream cheese
  • 1 teaspoon vanilla extract
  • 3 cups confectioners’ sugar
  • 1 teaspoon water
  • 4 drops of green food colouring
  • 1-1/2 cups sweetened shredded coconut
  • Chocolate liquorice twists 
  • Chocolate egg candy

Baking and Preparation instructions:

  1. Preheat your oven to 350°C. While waiting for the heat, cream butter and sugar until light and fluffy in a large bowl for about 5-7 minutes.
  2. Beat in the egg and orange zest.
  3. Add the flour, baking soda, baking powder and salt.
  4. Gradually mix the buttermilk (or its alternative) into the creamed mixture.
  5. Pour mixture into paper-lined muffin cups while leaving a space of about two-thirds full.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let cupcakes cool down for 10 minutes before removing them from pans to wire racks.
  8. For the frosting, beat butter, cream cheese and vanilla in a separate bowl until smooth.
  9. Gradually add the confectioners’ sugar and spread the mixture over the cupcakes.
  10. Mix the water and food colouring in a large bowl before adding coconut.
  11. Stir to coat and sprinkle them over cupcakes.
  12. Use a skewer to poke 2 holes in the top of each cupcake with a hole on each side.
  13. Cut the liquorice into 6-inch strips for handles and insert each end of a liquorice piece into a hole.
  14. Decorate with candy eggs.

These scrumptious chocolate and marshmallow Easter eggs hold a shocking secret. Believe it or not, the soft and chewy filling is not made from store-bought marshmallows! Learn more about this healthier alternative by checking out the recipe below.

Ingredients:

  • 25 cups of all-purpose flour
  • 1 large egg
  • 2 tablespoons unflavored gelatin
  • 1/2 cup cold water
  • 2 cups sugar
  • 1 cup of light corn syrup divided into separate containers
  • 3/4 cup hot water
  • 2 teaspoons vanilla extract
  • 1 pound of melted dark chocolate
  • Egg-shaped disks for the hard chocolate coating

Cooking Instructions:

  1. Spread 7 cups of flour in each of three 13×9-inch pans and 4 cups of flour in a 9-inch square pan.
  2. Carefully wash the egg in a mild bleach solution (1 teaspoon chlorine bleach to 1 quart of warm water) before drying them.
  3. Press washed egg halfway into the flour to form an impression and repeat this 35 times while leaving a 2-inch space in between.
  4. In a small bowl, sprinkle the gelatin over cold water and set it aside.
  5. In a large saucepan mix the sugar, 1/2 cup corn syrup and hot water.
  6. Bring to a boil over medium heat while continuously stirring it until a candy thermometer reads 238°C.
  7. Remove from the heat and stir in the remaining corn syrup.
  8. Pour into a large bowl and add reserved gelatin, 1 tablespoon at a time.
  9. Beat on high speed until candy is thick and has cooled to lukewarm.
  10. Cool for about 10 minutes before adding the vanilla.
  11. Design eggs to your liking.

We can never go wrong with the classic sugar cookies when it comes to cute Easter treats. Prepare a variety of colours and design materials to make this activity more memorable for your kids.

Ingredients:

  • 1 cup of softened butter
  • 3 ounces of softened cream cheese
  • 1 cup sugar
  • 1 large egg yolk left at room temperature
  • 1/2 teaspoon of vanilla extract
  • 1/4 teaspoon of almond extract
  • 2-1/4 cups of all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • Tinted frosting or coloured sugar

Baking and Preparation instructions:

  1. Cream butter, cream cheese and sugar in a large bowl.
  2. Beat in the egg yolk and the extracts.
  3. Gradually add the flour, salt and baking soda to the creamed mixture.
  4. Cover and refrigerate for 3 hours or until easy to handle.
  5. Preheat the oven to 375°C. 
  6. On a lightly floured surface, roll out the dough until 1/8-inch thick.
  7. Cut with a 2-1/2-inch cookie cutter dipped in flour.
  8. Place 1 inch apart on ungreased baking sheets.
  9. Bake for 8-10 minutes or until the edges start to turn brown.
  10. Cool for 2 minutes before removing from pans to wire racks.
  11. Decorate the cookies to your liking.
