What you need for Black Vinegar Trotter:
- 1 pig’s trotter
- 300 g brown sugar
- 200g old ginger
- 500 ml black vinegar
What you do:
- Cut pigs trotter into serving pieces.
- Rinse and scaled them in hot water.
- Remove and drain well.
- Skin and mash ginger lightly.
- Heat 2 tablespoons of sesame oil and fry ginger till golden brown.
- Transfer ginger to claypot.
- Add vinegar and brown sugar.
- Bring it to a boil and let simmer for half an hour.
- Add the trotters and simmer for two hours. (Till the trotters are soft and tender)
