12 steps to baking your own mooncake

The mooncake festival is here again! Mooncakes have undoubtedly evolved. It’s hard to find traditional ones these days as you’ll see green tea, mango, cheese, durian, ice cream and even meat-filled mooncakes on display. Why not make a mooncake with your kids and spend this time bonding.

The ingredients you’ll need...

- 4 cups of all purpose plain flour - ¾ dried milk powder - 1 tablespoon of baking powder - 1 ½ teaspoon vanilla essence - 1 ¼ cups of sugar - 1 teaspoon of salt - ¾ cup of unsalted butter - 3 large eggs - water You will need a mooncake moulder and baking sheets as well.

Mix the flour, milk powder and salt in one big bowl. Mix until all is even.

Mix the eggs with the sugar and beat for approximately 5 minutes. Add in the butter and vanilla essence and mix well.

Mix step 1 and 2 together and mix to create dough. Mix until the dough is smooth.

Lay the dough onto a floured surface to prevent it from sticking everywhere. Roll the dough into log shapes and keep them in the refrigerator for a night.

Take out the dough from the refrigerator the next day and place them on a few baking sheets depending on the size of the dough.

Pre-heat the oven to 375°F/190°C. Stretch and press each dough pieces into a 3-inch circle or into the size you prefer.

Cut the dough to the mooncake size you prefer. Add some flour to the dough before pressing them into the mooncake moulder to ease the dough out after pressing.

Place each dough about 1 inch apart from each other on the baking sheet. Brush all the dough with egg wash before putting them into the oven.

Bake the dough for 30 minutes. The dough should look golden-brown when it’s ready.

Poke one of the cakes with a skewer to make sure the insides are ready as well. If not, bake for another 10 minutes.

When the baking is done, place the cakes on a wire cooling rack. Mooncakes taste best when they are at room temperature.

Serve the mooncakes with Chinese tea to compliment the taste. Enjoy.
