Traditional Chicken in Sweet and Sour Sauce with ZESPRI® Kiwifruits (serves 4 persons)
INGREDIENTS:
Chicken drum stick (diced) – 200g
Corn flour (coating the chicken drum deep-frying) – a dash
ZESPRI® Kiwifruits (diced) – 3pcs
SEASONING: Sweet and Sour Sauce (Serves 10)
Water – 130 ml
Sugar – 150g
Salt – 10g
Brown sugar – 60g
White vinegar – 80ml (add in once the above mixtures are cool)
Tomato sauce – up to taste
GARNISH :
Coriander leave
White sesame seed
METHOD OF PREPARATION
1. Marinated Chicken Drum Stick. Use the following ingredients:
- Egg (1 pcs)
- Salt (¼ tsp)
- Sugar (¼ tsp)
- Sesame oil (a dash)
- Chinese wine (hua tiew chiew) – a dash
- Five spice powder (¼ tsp)
- Corn flour (2 tsp)
2. Bring all seasoning Sweet and Sour Sauce (above) to boil until sugar is diluted. Set aside. Leave out tomato sauce.
3. Combine the Seasoning sauce with the Marinated Chicken Drum Stick (above) and set aside for 30 minutes.
4. Deep-fry chicken drum stick coated with corn flour in hot oil till brown color and fully cooked
5. Heat wok and drizzle a bit oil and add the Seasoning and enough tomato sauce to your liking and bring to boil
6. Add in chicken and kiwi fruits and toss well
7. Garnish with coriander leaves and white sesame seed
