The mezza9 kitchen is led by Executive Sous Chef Martin Satow, a Hamburg native who specialises in seafood. Chef Martin’s strong advocacy for sustainable seafood during his tenure in Andaz Liverpool, London in 2012 saw the restaurant ‘Catch’ become one of the top three sustainable seafood restaurants in the UK, certified by Fish2 Fork.
No matter what guests pick out from the sumptuous fare during brunch, a great deal of thought and care has gone into each dish. Having been awarded Chain of Custody (CoC) certifications by the Marine Stewardship Council (MSC) and Aquaculture Stewardship Council (ASC), Grand Hyatt Singapore features plentiful, healthful options alongside indulgent yet sustainable ones, like Maine lobster, Scottish brown crab, Spencer Gulf king prawns and Pacific rock oysters.
Stronger focus on sustainable seafood and farming practices
mezza9 has strengthened partnerships with the creators of the produce served in mezza9’s Sunday brunch which showcases and highlights signature products from farmers, butchers, fishermen and artisan cheese makers.
