Moroccan Chicken Stew

Cooking Time: 40 mins

 

Ingredients:

Olive oil: 2 tbsps
Chicken thighs, skinned: 4
Large onion, chopped: ½
Stewed tomatoes (about 400ml): 1 can
S&W Premium Prune Juice: ½cup
Raisins: ½ cup
Ground all-spice: ¼ tsp
Ground cinnamon: ½ tsp
Salt: ½ tsp
Ground black pepper: ½ tsp
Couscous: 1 cup
Water: 1 ⅓ cup
Butter: 1 tbsp
Lemon juice: 1 tsp

Instructions:

  1. Heat olive oil in a heavy-bottom pan over medium-high heat. Add chicken to the pan and sear for five minutes on one side.
  2. Add the chopped onion and stir till the onion and chicken are browned.
  3. Add tomatoes, prune juice, raisins, all-spice, cinnamon, salt and pepper to the pan. Stir and reduce heat to low.
  4. Cover and cook for 30 minutes, stirring occasionally.
  5. In the meantime, make the couscous by placing the couscous in a bowl. Bring the water to a boil and pour it over the couscous. Cover the bowl with a plate and allow the couscous to absorb all the liquid.
  6. Fluff the couscous with a fork and add the butter, a pinch of salt and lemon juice. Stir to mix well.
  7. To serve, place couscous on a serving platter and spoon the chicken stew on top. Garnish with chopped parsley.
