They say the way to a man’s heart is through his stomach, so with Father’s Day around the corner, there’s no better way to treat the king of the house than to make him a meal all by yourself.

So gear up and be prepared to thrill dad with this Moroccan Chicken Stew recipe that takes less than an hour to prepare.

Ingredients:
Olive oil: 2 tbsps
Chicken thighs, skinned: 4
Large onion, chopped: ½
Stewed tomatoes (about 400ml): 1 can
S&W Premium Prune Juice: ½cup
Raisins: ½ cup
Ground all-spice: ¼ tsp
Ground cinnamon: ½ tsp
Salt: ½ tsp
Ground black pepper: ½ tsp
Couscous: 1 cup
Water: 1 ⅓ cup
Butter: 1 tbsp
Lemon juice: 1 tsp
Instructions:
- Heat olive oil in a heavy-bottom pan over medium-high heat. Add chicken to the pan and sear for five minutes on one side.
- Add the chopped onion and stir till the onion and chicken are browned.
- Add tomatoes, prune juice, raisins, all-spice, cinnamon, salt and pepper to the pan. Stir and reduce heat to low.
- Cover and cook for 30 minutes, stirring occasionally.
- In the meantime, make the couscous by placing the couscous in a bowl. Bring the water to a boil and pour it over the couscous. Cover the bowl with a plate and allow the couscous to absorb all the liquid.
- Fluff the couscous with a fork and add the butter, a pinch of salt and lemon juice. Stir to mix well.
- To serve, place couscous on a serving platter and spoon the chicken stew on top. Garnish with chopped parsley.
