In What’s Cookin’ with Cassie, actress Cassandra Spykerman walks you through four simple yet tasty recipes — perfect for a fuss-free meal. 

1. Egg salad

Ingredients:

  • 2 tablespoons finely chopped celery
  • Chives
  • 3 tablespoons finely chopped red onion
  • 3 tablespoons finely chopped dill
  • 8 eggs
  • Dijon mustard
  • 1/3 cup mayonnaise
  • 1/2 teaspoon paprika
  • 2 teaspoons of lemon juice
  • 1 clove garlic

Steps:

1. Boil the eggs in a pot for 30 mins.

2. While the eggs are cooking, chop up your celery, red onion, dill and chives. Set aside.

3. Cool the boiled eggs in a bowl of iced water for five minutes.

4. For the dressing, add mayonnaise, lemon juice, mustard, and paprika into a bowl. 

5. Mince the garlic and add to the bowl.

6. Peel the eggs and mash them.

7. Add the dressing and the chopped celery, red onion, dill and chives to the eggs. Mix well.

2. Beef and broccoli ramen stir fry

Ingredients: 

  • 2 packets instant ramen
  • Broccoli 
  • Olive oil
  • 6 tablespoons soya sauce
  • 2 tablespoons sesame oil
  • 1/4 teaspoon black pepper
  • 3 cloves garlic 
  • 1 teaspoon of ginger
  • Chives
  • 3 tablespoons brown sugar
  • 1 1/2 tablespoons corn starch
  • Beef

1. Cut the broccoli into six florets. 

2. Grate the garlic and ginger.

3. For the sauce, add the brown sugar into a bowl.

4. Add the corn starch in.  

5. Add the sesame oil, soya sauce, as well as half a cup of warm water. 

6. Add the grated garlic and ginger and mix well. 

7. Cook the instant noodles for three minutes. 

8. Drain noodles, rinse with cold water and set aside.

9. Heat a wok on medium heat. 

10. Add 1 tablespoon of olive oil to your wok.

11. Add in the broccoli and two tablespoons of water.

12. Cover the wok with a lid for four minutes. 

13. Once the broccoli is done, scoop it out of the wok. 

14. Add another tablespoon of olive oil to your wok and saute your beef on medium heat for two minutes on each side. 

15. Add the sauce into the wok and let it simmer for three to four minutes. 

16. Add broccoli back in when the sauce thickens. 

17. Add the instant noodles back into the wok and mix well. 

18. Plate and garnish with chilli padi.

3. Spaghetti carbonara

Ingredients: 

  • 4 slices turkey bacon
  • 1/2 cup parmesan cheese
  • Cooking cream
  • 2 large eggs
  • Parsley
  • 4 cloves garlic
  • 250g spaghetti

Steps: 

1. Dice four cloves of garlic.

2. Dice four slices of turkey bacon.

3. Whisk eggs and cheese together in a large bowl.

4. Boil spaghetti.

5. Drain pasta, saving half a cup of pasta water. 

6. Add some butter to your pasta and mix. 

7. Add bacon to a pan and fry until golden brown. 

8. Add garlic. 

9. Add the pasta and carbonara sauce mixture into the pan.

10. Season with salt and pepper. 

11. Add in some cream and mix well. 

12. Plate and garnish with parsley. 

4. Butter fried rice with pan-seared salmon

Ingredients: 

  • 1/2 bell pepper
  • 1 cup brown mushrooms
  • Lemon
  • Salmon fillet
  • 3 cloves of garlic
  • 1/2 big onion
  • Rice
  • 2 tablespoons oil
  • 2 tablespoons butter

Steps:

1. Chop the bell pepper, garlic, onion and mushrooms finely.

2. Add 2 tablespoons of oil to a pan.

3. Add 2 tablespoons of butter to the pan.

4. Add the onions to the pan. Cook halfway before adding in the garlic and bell pepper. 

5. Add mushrooms and rice, and stir fry. Set the fried rice aside.

6. Make sure the salmon is dry, especially the skin.

7. Place the salmon in the pan skin side down.

8. Sear each side of the salmon for one minute. 

9. Plate the rice and salmon, and garnish with some parsley and a lemon wedge.
